Capsicum Pudding | शिमला मिर्च की खीर

When we talk about Indian style pudding , rice or vermicelli pop up in our mind but if I say that, this time  we are going to make pudding with pepper! 
Sound strange !!! 
Commonly we use peppers for salty preparations not for sweet or as a dessert.

जब हम खीर की बात करते है तो कुछ मीठा स्वादिष्ट चावल या किसी अन्य अनाज  से बनी चीज़ हमारे ध्यान में आती है । यदि मैं कहूँ की हम शिमला मिर्च से कुछ मीठा बनाएँगे तो कुछ अटपटा लगेगा , है ना ! 
यह सच है की शिमला मिर्च आमतौर पर नमकीन खाने के साथ ही प्रयोग होती है मीठे में नहीं )

Good To know :-

Before jumping to recipe I would like to talk about pepper first:-

1)    pepper is native to South and Central America .(शिमला मिर्च मुख्यतःदक्षिण और मध्य अमेरिका से है ।)

2)    It belongs to NightShade family.( ये Solonaceae परिवार का सदस्य है ।) 

3)    There are many colours like Green, red, orange, yellow, purple , lavender bell peppers.( शिमला मिर्च में बहुत से रंग पाए जाते है ।)

4)    Green unripe peppers have a slightly bitter flavour than others because it has been picked earlier.( हरी शिमला मिर्च का स्वाद दूसरी मिर्चों की तुलना में कड़वा होता होता है)

5)    All bell peppers start out green and change their colour as they mature as per varieties.( शुरुआत में सभी मिर्च हरी ही होती है, परपक्वता के साथ इनका रंग बदल जड़ता है ।)

6)    The bell pepper is the only member of the genus Capsicum that does not produce capsaicin .( शिमला मिर्च अकेली ऐसी मिर्च है जिसमें capsaicin नहीं पाया जाता।)

7)    Capsaicin is a lipophilic chemical that can cause a strong burning sensation when it comes in contact with mucous membrane.(कैपेसिसिन एक लिपोफिलिक रसायन है जो श्लेष्म झिल्ली के संपर्क में आने पर एक मजबूत जलन पैदा कर सकता है)

8)    Bell peppers contain many healthy antioxidants, folate, potassium,vitamins and carotenoids.( शिमला मिर्च में बहुत  से स्वास्थ्य वर्धक तत्व पाए जाते है ।

9)    Eating capsicum reduces the risk of Anemia and also good for eye health.( शिमलामिर्च अनीमिया और आँखों के स्वास्थ्य के लिए लाभकारी होता है )



Myths about lobes or Bumps:-( मिथ्या तथ्य )

  • We have seen on social media classrooms that pepper with 3 lobes is male and with four is female and male pepper is less sweeter than female one.
  • Well this is all myth !
  • Pepper fruit is hermaphrodite so don’t have any gender. The numbers of lobes are determined by growing conditions and may be genetically.
  • मैंने देखा कि इंटर्नेट पर ये बात बात सर्वव्यापी है कि शिमलामिर्च में पाए जाने वाले lobes या bumps से उनके मीठा या कम मीठा होने को दर्शाते है , पर ये मिथ्या है ।

Now let’s talk about pudding or Kheer:-

Serving : 2 people 

Ingredients:

Capsicum-1 medium size
Milk -500 ml
Water 1 litre( for boiling)
Chilled water ( for cooling)
Sugar -2 tablespoon 
Cardamom -half tablespoon 
Chopped nuts - any 
Saffron threads- optional 

Procedure:

I choose the green pepper but you can choose any of available variety .


1)Take a medium sized capsicum , removed all the seeds and inner flesh and chopped it into small   
pieces. 

 2) Meanwhile heat up the half litre milk and about 1 litre water.
3) when you see, water  is boiling , add chopped pepper into and wait for 3 to 5 minutes.



4) Remember we don’t need to boil it completely, it should be half boiled.

5) strain the pepper and immediate transfer to chilled water or to freezer.


6) if you want to restrain the colour Of pepper, blanching is mandatory.

7) now you can see milk is also boiling, add blanched pepper and keep stirring
8) now add half tablespoon cardamom powder and two tablespoon sugar.



9) you can increase or decrease the amount of sugar or can use any kind of sugar ( whatever you eat) 
10) keep stirring and add chopped nuts and wait for another 3 to 5 minutes.

11) you will see, the milk remains 1/3 of total and thickened.

12) turn off stove and serve or you just can keep in refrigerator for sometime and enjoy this unique flavour experience.
